Description: The carrot is a biennial herb with a spindle shaped taproot, which is white in the wild variety and orange or yellow in the cultivated variety. Used as a vegetable by the Greeks and Romans and brought over in Elizabethan England by Flemish refugees. Carrots contain carotenes (provitamin A), Vitamin B, vitamin C, sugars and pectin’s.
